4 boneless, skinless chicken breast halves
½ teaspoon salt
½ teaspoon pepper
¼ cup shredded mozzarella cheese
¼ cup hot pepper sauce
2 tablespoons mayonnaise
1 cup crushed cornflakes
- Preheat oven to 400°F. Grease an 11×7-inch baking dish.
- Flatten chicken breasts to 1/4-inch thickness. Season with salt and pepper and sprinkle with shredded cheese. Roll up each and secure with toothpicks.
- In a small bowl, mix hot pepper sauce and mayonnaise. Place cornflakes in a separate shallow bowl. Dip the chicken in the pepper sauce mixture, and then coat with the cornflakes. Place seam-side down in prepared baking dish.
- Bake, uncovered, 30-35 minutes, or until the juices of the chicken run clear. Discard toothpicks before serving.
